Training milk and dairy maids was one of the first vocational training opportunities for young women. Two thousand and five hundred of them were trained during the 19th century. The Imperial Senate and the Finnish Economic Society supported cattle and dairy schools. These were initiated and supported by officials coming from the Finnish gentry. The development of dairies was driven economically by the increased demand for butter, especially in St. Petersburg. In southern Finland, the most active developers of the butter production, and founders of schools, were the owners of the estates. In eastern Finland, schools were used to promote the development of agriculture.
